(No Curdling)
2 tablespoons butter
2 tablespoons flour
2 teaspoons salt
2 cups milk
6 cups (2.5 lb) sliced potatoes
1 tablespoon melted butter
Melt butter in saucepan, stir in flour and salt. Add milk gradually, stirring constantly until sauce boils and thickens. Add potatoes and heat with occasional stirring until the sauce boils again. Turn potatoes and sauce into a shallow greased casserole dish 6 1/2x10x1 3/4 inches. Drizzle melted butter over top. Place on the top rack. a little above the middle of the oven and bake at a moderate temperature (350 degree F.) for 35 minutes or until potatoes are tender, the creamy liquid bubbles up almost over them and the potatoes are a tempting brown on top. Serve hot. Makes 5 servings.
Note: Flour may be omitted and the potatoes heated in the milk containing the butter and salt, provided the potatoes are thoroughly matured.
