4 c diced rhubarb
1 c sugar, heaping
4 tbsps flour
1 c brown sugar
¾ c rolled oats
1 ½ c flour
½ c butter
½ c shortening — or butter
Combine rhubarb, sugar, and 3 T. flour and place in greased 8×12 baking dish. Combine brown sugar, oats, and 1 ½ c. flour, cut in butter and shortening, and sprinkle over rhubarb. Bake at 375 for 35-40 minutes.

Then you sprinkle it with the sugar and then the jello powder. Take 1 C. of brown sugar, 1 C. of oats, and 1 & 1/2 C. of flour, mix together and then cut in 2 sticks of butter or 1/2 C. butter and 1/2 C. shortening. Sprinkle crumb mixture over rhubarb and bake at 375 degrees for 45 minutes. For some strange reason though, my topping is never crumbly, but more like a biscuit-type topping. I serve it warm with vanilla ice cream – low-fat ice cream of course!
