Rosemary Chicken


4 medium sized chicken breast halves (about 2 lbs)

In a bowl, MIX:

1 tbsp extra virgin olive oil

2 tbsp red wine vinegar

¼ tsp dried rosemary, crushed

¼ tsp dried thyme

¼ tsp dried tarragon

Dash of paprika

Dash of black pepper

SPRAY broiler pan with non-stick cooking spray

PLACE breasts bone-side down and BROIL 6 inches from hear for 20 minutes. TURN breasts up and brush with marinade. BROIL 10 minutes. Brush with marinade again and Broil about 5 minutes more.
