INGREDIENTS
1 pint ice cream, softened (not low-fat)
1 1/2 cup self-rising flour
DIRECTIONS
Stir ingredients together just until flour is moistened. Spoon batter into a greased 8×4 inch loaf pan. Bake at 350 for 40-45 minutes. Remove from pan and cool on a wire rack.

1/2 cup confectioner’s sugar
2 cups cake flour
1 cup butter
1/4 tsp salt
1 tsp vanilla
1/4 tsp baking powder
Mix all ingredients together well and chill. Roll to 1/4 inch thickness on foil; prick and bake for 20 minutes in a 350 degree oven.

4 tomatoes, peeled and chopped
1/4 tsp basil
dash of fresh ground black pepper
DIRECTIONS
Combine all ingredients. Chill 1 hour. Makes about three cups.
